Ingredients
  

  • 6 large eggs
  • 1/2 cup full-fat plain Greek yogurt
  • 1 tablespoon aluminum-free baking powder
  • 1/4 cup melted butter or coconut oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon xanthan gum or psyllium husk powder
  • Optional 1/2 cup finely ground almond flour

Method
 

  1. Preheat the oven to 350°F and line an 8x4-inch loaf pan with parchment paper. Then whisk the eggs, yogurt, and melted butter until smooth. Next, add baking powder, salt, and xanthan gum or psyllium husk powder, mixing well. After that, stir in almond flour if using. Pour the batter into the pan, smooth the top, and bake for 35 to 45 minutes until set. Finally, cool briefly in the pan, then transfer to a rack and cool completely before slicing.
